I love cooking.  Like, a lot.  Have I mentioned that?  If I had the guts, I would open a food truck.  But not just any food truck – a french fry food truck.  More on that another time (I don’t want anyone stealing my ideas, ya know).

How do I find recipes?  Mostly, I just search – Pinterest, Instagram, cooking magazines – are all great places for inspiration.  Then I usually tweak something about the recipe.  This week I give you 1 of the best things I’ve made in a while:

Grilled mussels with blistered diced tomatoes

1 pound mussels (I picked mine up at Costco)
1/4 cup fresh lemon juice, divided
3 tablespoons butter or margarine, melted (you can use more or less here)
1/2 cup dry white wine
1 teaspoon hot sauce
1 teaspoon dried crushed red pepper
2 garlic cloves, minced
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup coarsely chopped fresh parsley

Remove beards on mussels, and scrub shells well with a brush. Discard open or cracked mussels.  Never prepared mussels?  Be sure to read this first

Combine lemon juice and next 5 ingredients in a large bowl; set aside.

Sprinkle mussels with salt, black pepper, and 2 tablespoons lemon juice and toss them in a grill basket. Place mussels in a grill basket and grill, with lid closed, over high heat (400º to 500º) about 10 minutes or until shells open. Discard any unopened mussels – trust me, you don’t want to eat these.

When finished, toss mussels in lemon mixture and sprinkle with parsley.

Serve atop blistered diced tomatoes
