There are some people in this world who innately love salad.  I am not one of them, but one of my best pals, Anna, is, and boy, does she make them look good.  Seriously, she puts all the things in them.  There is no recipe – whatever you have in the fridge (or cabinet) will work.

I’ve recently (and by recent, I mean yesterday) started working with a trainer/nutrition plan.  I love to go to the gym, but I love food more and I need to find a healthy balance.  Life is just too short to be unhealthy.  Restrictive plans simply don’t work for me – or anyone, in my opinion.  In short, the plan is to still eat all the things I love, in moderation. One of the things I now love (thanks to Anna) is SALAD!  Hooray!

I brought one on Monday and made all of my co-workers jealous.


  • lettuce
  • tomatoes
  • onions
  • mushrooms
  • leftover grilled zucchini
  • avocado
  • chicken
  • roasted red peppers
  • olives
  • basil leaves
  • banana peppers
  • balsamic vinegar
  • spicy olive oil (just a teaspoon or so).
