Okay, I’ll admit it, I’m a follower.  At least when it comes to the avocado toast trend.  If we’re being honest, I have been eating avocados since before it the best thing since sliced bread.  My mom would buy them by the dozen, crack them up, sprinkle some salt and eat them with a spoon.  I followed in her footsteps as a kid and when the toast thing became a thing, well, I knew it was meant for me.

It’s moderately healthy, depending on your prep, full of good fats, and tastes so freaking good.  Some of my favorite additions:  onions, goat cheese, strawberries, garlic, jalapenos – the list really could go on and on.   This morning I woke up with a yearning, so off to the kitchen I went.

This time I broiled the avocado first (you can grill them, too), sauteed some onions and jalapenos.  Then I mixed the avocado with minced garlic, crushed red pepper, a bit of salt and pepper, and the sauteed veggies.  Spread it on the toast and top with a single dry fried egg and you’ve got a divine breakfast for less than 350 calories.  Ridiculous, right?!  What are some of your favorite ways to prepare avocado toast?
