A Girl and Her Grill: Lamb Burgers
I can be a finicky eater, so my hesitation about food in Ireland (I went back in June) was huge. Turns out my hesitation was unwarranted because I had some of the best food I’ve eaten in my life on that 10 day trip. Fish and chips? Duh. Fresh seafood? You bet I ate those crab toes. Guinness, lamb, all the lamb please. My favorite meal was at this pub in Doolin – lamb burger with pico, coleslaw, spicy potato wedges and a garlic lemon sauce. My god, I have been dreaming about that burger, so when I went to the farmer’s market on Wednesday and saw ground lamb, I just knew I needed to buy it in an attempt to recreate this insane meal.

Pinch crushed red pepper
2 cloves garlic, finely smashed
1 1/2 pounds ground lamb
1/2 bunch fresh dill, finely chopped
1/2 bunch fresh mint, finely chopped
2 sprigs fresh oregano, finely chopped
Zest of 1/2 lemon
1 beefsteak tomato, sliced for garnish
In a large bowl, combine the lamb, the dill, mint, oregano, lemon zest and Sprinkle with salt and combine well.
Preheat the grill.
Form the lamb mixture into 4 equal patties and sprinkle with salt. Cook 4 to 5 minutes per side for medium-rare. Remove the burgers from the grill and let rest for 3 to 4 minutes.
Top with tomato slices and onion.
I also grilled some veggies and sweet potato fries to give me a nice, well-rounded meal. My burger wasn’t as good as the one in Ireland, but it was still an A+ meal.
